Chocolate Truffles (Brigadeiro)

Ingredients (20 portions):

  • 1 can condensed milk, (395g)
  • 200g good quality dark chocolate, minimum 60% of cocoa paste
  • 200g double cream
  • 20g butter
  • 10g glucose syrup
  • chocolate sprinkles to roll

Follow the Steps

  1. The chocolate should be in pallets. If you have a chocolate bar it should be finely chopped.
  2. In a pan mix well the condensed milk with the cream.
  3. Add in the glucose, butter and the chocolate. Mix everything.
  4. Turn on the oven to a medium-lo heat and start stirring.
  5. It takes between 15 to 20 minutes until this creams reaches the correct texture.
  6. Put this mixture into a plate and cover it with clean-film.
  7. Let it rest at room temperature for about 12 hours. If its hot put this chocolate dough in the fridge.
  8. After the dough has rested make the truffles and cover with the chocolate sprinkles.

 

Instead of chocolate you can put 1 tbsp of cinnamon and you will get Churro Truffles. In this case roll the truffles in cinnamon sugar! and please don’t eat the entire batch.
