Brazilian Style Black Beans

Ingredients (3 portions):

  • 500g baked black beans
  • 50g of bacon, cut into strips
  • 50g of chorizo, cut into slices
  • 6 cloves of garlic, chopped
  • 1 tbsp olive oil
  • 1 medium onion, chopped (about 120g)
  • 1 bay leaf
  • 150ml vegetable stock
  • Salt &  Pepper

Follow the Steps

  1. In a non-stick pot heat the olive oil to cook the garlic and onions.
  2. Time for the bacon and the chorizo.
  3. When these are cooked you can add the beans, the bay leaf and the stock.
  4. Let it simmer, in the covered pot for about 40 minutes.
  5. Taste and season at the end…

 

Be careful taste before seasoning…the bacon is salty! By the way, this is a good dish to have frozen portions.
