Ham and Cheese Quiche

Ingredients (6 portions):

  • 1 ready rolled short crust pastry
  • 1 tbsp olive oil
  • 100g smoked bacon, cut into small pieces
  • 1 medium onion, chopped
  • 2 medium eggs
  • 250g double cream
  • 200g ham, cut into cubes
  • 150 g mozzarella, grated
  • Nutmeg
  • Salt & Black Pepper
  • 2 tbsp chives, chopped finely

Follow the steps

  1. Start preparing the pastry base. You should use a metal tin with a loose bottom. I always butter and flour the thin so that easily comes out after baking. Turn on the oven.
  2. Heat the olive oil in a large (non-stick) pan and cook the bacon. After the bacon is cooked add in the chopped onions. Leave to cool down.
  3. In a bowl beat the eggs, than add the double cream, the ham and cheese.
  4. Season to your taste with salt, pepper and nutmeg.
  5. Finally it’s time for the chives.
  6. Pour this mixture into your prepared pastry base.
  7. Put the tart in the preheated oven.
  8. It should take about 40 to 45 minutes in the oven. The colour should be golden brown.
