Salted Caramel Tarts

Ingredients (12 tarts):

  • 12 pre-made tart bases
  • 100g sugar
  • 200g double cream (120 for the caramel, 80g for the chocolate ganache)
  • 20g butter
  • 50g white chocolate pellets
  • coarse salt
  • 80g dark chocolate pellets
  • 1 tbsp vanilla extract
  • chocolate sprinkles, for decoration

Follow the steps

  1. Start by heating the 80g of double cream without boiling. You can use the microwave.
  2. Pour over the dark chocolate and let it rest for about 3 minutes.
  3. Stir until the chocolate totally melts and you get a creamy and smooth ganache. Set aside.
  4. In a pan, medium-low heat start to melt the sugar. When it gets to a golden light color pour slowly and carefully put in the double cream(120g). Stir continuously.
  5. Turn off the heat. Time to put the butter, the vanilla extract, a pinch of salt and the white chocolate.
  6. Mix well. Put this mixture in a bowl and let it cool to room temperature.
  7. Finally you can assemble the tarts: start with a layer of salted caramel, then a pinch o salt and cover with the chocolate ganache.
  8. Decorate with the chocolate sprinkles.
