Salted Caramel Tarts
Ingredients (12 tarts):
- 12 pre-made tart bases
- 100g sugar
- 200g double cream (120 for the caramel, 80g for the chocolate ganache)
- 20g butter
- 50g white chocolate pellets
- coarse salt
- 80g dark chocolate pellets
- 1 tbsp vanilla extract
- chocolate sprinkles, for decoration
Follow the steps
- Start by heating the 80g of double cream without boiling. You can use the microwave.
- Pour over the dark chocolate and let it rest for about 3 minutes.
- Stir until the chocolate totally melts and you get a creamy and smooth ganache. Set aside.
- In a pan, medium-low heat start to melt the sugar. When it gets to a golden light color pour slowly and carefully put in the double cream(120g). Stir continuously.
- Turn off the heat. Time to put the butter, the vanilla extract, a pinch of salt and the white chocolate.
- Mix well. Put this mixture in a bowl and let it cool to room temperature.
- Finally you can assemble the tarts: start with a layer of salted caramel, then a pinch o salt and cover with the chocolate ganache.
- Decorate with the chocolate sprinkles.
